Ingredients (Serves 4–6) 1 whole chicken (about 1.5 kg) or 1 kg chicken pieces 3–4 leeks, cleaned and sliced 1 onion, chopped 2 carrots, sliced 2 celery stalks, sliced 1 bay leaf 1 sprig fresh thyme 100 g rice or pearl barley Salt and freshly ground black pepper, to taste Fresh parsley, chopped (for garnish) Preparation Cook the chicken: Place chicken in a large pot and cover with water. Add bay leaf and thyme.


Beef and Ale Pie (Classic British Comfort Food Recipe)
Slow-cooked beef in a rich ale gravy, baked in a pastry crust.
