Ingredients (Serves 2)
4 eggs
2–3 tbsp ajvar (mild or spicy)
1 tbsp butter or oil
Salt and black pepper, to taste
Optional additions:
Crumbled white cheese or feta
Fresh parsley
Sliced onions or peppers
To Serve:
Fresh bread or flatbread
Preparation
Heat the pan:
Melt butter or heat oil in a skillet over medium heat.
Add ajvar:
Stir in ajvar and warm gently for 1–2 minutes to release its flavor.
Cook the eggs:
Crack eggs into the pan and scramble lightly with the ajvar, or fry them directly on top.
Season with salt and pepper to taste.
Serve:
Sprinkle with cheese or parsley if desired.
Serve hot with fresh bread.
