Ingredients (Serves 2)

  • 4 eggs

  • 2–3 tbsp ajvar (mild or spicy)

  • 1 tbsp butter or oil

  • Salt and black pepper, to taste

Optional additions:

  • Crumbled white cheese or feta

  • Fresh parsley

  • Sliced onions or peppers

To Serve:

  • Fresh bread or flatbread

Preparation

  1. Heat the pan:

    • Melt butter or heat oil in a skillet over medium heat.

  2. Add ajvar:

    • Stir in ajvar and warm gently for 1–2 minutes to release its flavor.

  3. Cook the eggs:

    • Crack eggs into the pan and scramble lightly with the ajvar, or fry them directly on top.

    • Season with salt and pepper to taste.

  4. Serve:

    • Sprinkle with cheese or parsley if desired.

    • Serve hot with fresh bread.

Cooking Tips

  • Warm the ajvar before adding eggs to deepen the smoky pepper flavor.

  • Avoid overcooking the eggs; they should stay soft and creamy to balance the richness of the ajvar.

Serving Suggestions

  • Serve with crusty bread or flatbread for a quick Balkan breakfast.

  • Pair with fresh tomatoes, cucumbers, or yogurt for a balanced light meal.
