Arctic Char with Dill and Butter (Scandinavian-Style Fish Dish)

Ingredients (Serves 2–4)
4 Arctic char fillets (about 150–200 g each), skin on
Salt and freshly ground black pepper, to taste
2–3 tbsp butter
1–2 tbsp fresh dill, chopped
1 lemon, sliced or juiced
Optional sides:
Boiled potatoes or new potatoes
Steamed vegetables (asparagus, peas, or carrots)
Preparation
Prepare the fish:
Pat fillets dry with a paper towel.
Season both sides lightly with salt and pepper.
Cook the Arctic char:
Heat butter in a skillet over medium heat until melted and hot.
Place fillets skin-side down and cook for 3–4 minutes until skin is crispy.
Flip gently and cook for another 2–3 minutes until fish is just cooked through.
Add dill and butter sauce:
Remove fillets from the pan and keep warm.
Add a little extra butter to the skillet and stir in chopped dill and a squeeze of lemon juice.
Pour the dill-butter sauce over the fish.
Serve:
Serve immediately with boiled potatoes and steamed vegetables.
Garnish with extra dill and lemon slices if desired.

Pair with light white wine or sparkling water.
Serve as a main course for lunch or dinner.

Do not overcook the fish; Arctic char is best tender and slightly pink in the center.
