Fideuà (Classic Spanish Seafood Noodle Dish)

Ingredients (Serves 4–6)
300 g fideuà noodles or short vermicelli
300 g squid or cuttlefish, cleaned and sliced
300 g prawns or shrimp, peeled
200 g clams or mussels, cleaned
1 onion, finely chopped
2 garlic cloves, minced
1 ripe tomato, grated or chopped
1 red bell pepper, diced
1 liter fish or seafood stock
3 tbsp olive oil
1 tsp smoked paprika
Salt and freshly ground black pepper
Lemon wedges, for serving
Optional: chopped parsley for garnish
Preparation
Prepare the sofrito:
Heat olive oil in a wide paella pan.
Sauté onion, garlic, and red pepper until soft.
Add grated tomato and cook until reduced.
Cook seafood:
Add squid or cuttlefish and sauté 3–4 minutes until slightly firm.
Stir in prawns and cook briefly.
Add noodles and seasoning:
Add fideuà noodles and smoked paprika, stirring to coat with the sofrito.
Add stock:
Pour in fish or seafood stock, season with salt and pepper.
Simmer over medium heat for 8–10 minutes, then reduce heat and cook another 8–10 minutes until noodles absorb most of the liquid.
Add shellfish:
During the last few minutes, add clams or mussels, allowing them to open as the noodles finish cooking.
Serve:
Remove from heat, let rest 2 minutes, garnish with parsley, and serve with lemon wedges.
Serving Suggestions
Serve as a main course with a fresh salad.
Pair with dry white wine or rosé.
Enjoy as part of Spanish tapas or seafood feasts.
