  • 300 g fideuà noodles or short vermicelli

  • 300 g squid or cuttlefish, cleaned and sliced

  • 300 g prawns or shrimp, peeled

  • 200 g clams or mussels, cleaned

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 ripe tomato, grated or chopped

  • 1 red bell pepper, diced

  • 1 liter fish or seafood stock

  • 3 tbsp olive oil

  • 1 tsp smoked paprika

  • Salt and freshly ground black pepper

  • Lemon wedges, for serving

  • Optional: chopped parsley for garnish

Preparation

  1. Prepare the sofrito:

    • Heat olive oil in a wide paella pan.

    • Sauté onion, garlic, and red pepper until soft.

    • Add grated tomato and cook until reduced.

  2. Cook seafood:

    • Add squid or cuttlefish and sauté 3–4 minutes until slightly firm.

    • Stir in prawns and cook briefly.

  3. Add noodles and seasoning:

    • Add fideuà noodles and smoked paprika, stirring to coat with the sofrito.

  4. Add stock:

    • Pour in fish or seafood stock, season with salt and pepper.

    • Simmer over medium heat for 8–10 minutes, then reduce heat and cook another 8–10 minutes until noodles absorb most of the liquid.

  5. Add shellfish:

    • During the last few minutes, add clams or mussels, allowing them to open as the noodles finish cooking.

  6. Serve:

    • Remove from heat, let rest 2 minutes, garnish with parsley, and serve with lemon wedges.
