Ingredients (Serves 2)
4 sausages (pork or beef)
4 slices of back bacon
2–4 large eggs
100 g mushrooms, sliced
1–2 tomatoes, halved
150 g baked beans
2–4 slices of bread, for toast
2 tbsp butter or oil, for frying
Salt and freshly ground black pepper, to taste
Preparation
Cook the sausages:
Heat a frying pan over medium heat and cook sausages until browned and cooked through, about 10–12 minutes, turning occasionally.
Cook the bacon:
In the same pan, fry the bacon slices until crispy or to your preferred doneness.
Cook the vegetables:
Sauté mushrooms in butter or oil until tender.
Grill or pan-fry tomato halves until slightly caramelized.
Heat baked beans:
Warm baked beans in a small saucepan over low heat, stirring occasionally.
Cook the eggs:
Fry eggs to your liking (sunny-side-up, over-easy, or scrambled) in butter or oil.
Toast the bread:
Toast bread slices and optionally butter lightly.
Assemble the breakfast:
Arrange sausages, bacon, eggs, mushrooms, tomatoes, and baked beans on plates.
Serve with toasted bread on the side.
Serving Suggestions
Serve with black tea, coffee, or fresh juice.
Optional extras: hash browns, black pudding, or fried bread for a more traditional version.
Cooking Tips
Cook sausages first as they take the longest.
Keep cooked items warm in a low oven while finishing other components.
Use fresh, high-quality ingredients for the best flavor.
