Irish Potato and Leek Soup (Traditional Irish Comfort Soup Recipe)

Ingredients (Serves 4–6)


  • 500 g potatoes, peeled and diced

  • 3 leeks, cleaned and sliced

  • 2 tbsp butter

  • 1 small onion, chopped

  • 750 ml vegetable or chicken stock

  • 100 ml cream or milk (optional)

  • Salt and freshly ground black pepper, to taste

  • Fresh chives or parsley, chopped (for garnish)


Preparation


  1. Cook the base:

    • Melt butter in a large pot over medium heat.

    • Add leeks and onion and cook gently for 8–10 minutes until soft, not browned.

  2. Add potatoes and stock:

    • Stir in diced potatoes and pour in stock.

    • Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.

  3. Blend the soup:

    • Blend with a hand blender until smooth, or leave slightly chunky if preferred.

  4. Finish:

    • Stir in cream or milk if using.

    • Season with salt and black pepper to taste.

  5. Serve:

    • Ladle into bowls and garnish with fresh herbs.


Serving Suggestions


  • Serve with Irish soda bread or crusty bread.

  • Ideal as a starter or light main course.

  • Do not brown leeks to preserve their delicate flavor.

  • Use floury potatoes for a naturally creamy texture.

  • Soup thickens as it cools—adjust with stock if needed.
