Irish Potato and Leek Soup (Traditional Irish Comfort Soup Recipe)

Ingredients (Serves 4–6)
500 g potatoes, peeled and diced
3 leeks, cleaned and sliced
2 tbsp butter
1 small onion, chopped
750 ml vegetable or chicken stock
100 ml cream or milk (optional)
Salt and freshly ground black pepper, to taste
Fresh chives or parsley, chopped (for garnish)
Preparation
Cook the base:
Melt butter in a large pot over medium heat.
Add leeks and onion and cook gently for 8–10 minutes until soft, not browned.
Add potatoes and stock:
Stir in diced potatoes and pour in stock.
Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
Blend the soup:
Blend with a hand blender until smooth, or leave slightly chunky if preferred.
Finish:
Stir in cream or milk if using.
Season with salt and black pepper to taste.
Serve:
Ladle into bowls and garnish with fresh herbs.

Serve with Irish soda bread or crusty bread.
Ideal as a starter or light main course.

Do not brown leeks to preserve their delicate flavor.
