Lamb Chops with Mint Sauce

Ingredients (Serves 2–4)
For the Lamb Chops:
8 lamb chops (rib or loin)
2 tbsp olive oil
Salt and freshly ground black pepper
1–2 sprigs fresh rosemary (optional)
For the Mint Sauce:
3 tbsp fresh mint leaves, finely chopped
1–2 tbsp white wine vinegar
1 tsp sugar
Pinch of salt
1–2 tbsp boiling water
Preparation
Prepare the mint sauce:
Place chopped mint in a small bowl.
Add sugar, salt, and vinegar.
Stir in boiling water and let sit for 10 minutes to allow flavors to meld.
Cook the lamb chops:
Heat olive oil in a frying pan over medium-high heat.
Season lamb chops with salt and pepper.
Fry or grill chops for 3–4 minutes per side for medium-rare, adjusting time for desired doneness.
Optionally, add rosemary to the pan for extra aroma.
Serve:
Arrange lamb chops on plates and drizzle with mint sauce or serve it on the side.

Serve with roasted potatoes, steamed vegetables, or grilled asparagus.
Pair with red wine such as Shiraz or Cabernet Sauvignon.
