Ingredients (Serves 2–4)


For the Lamb Chops:

  • 8 lamb chops (rib or loin)

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper

  • 1–2 sprigs fresh rosemary (optional)

For the Mint Sauce:

  • 3 tbsp fresh mint leaves, finely chopped

  • 1–2 tbsp white wine vinegar

  • 1 tsp sugar

  • Pinch of salt

  • 1–2 tbsp boiling water


Preparation


  1. Prepare the mint sauce:

    • Place chopped mint in a small bowl.

    • Add sugar, salt, and vinegar.

    • Stir in boiling water and let sit for 10 minutes to allow flavors to meld.

  2. Cook the lamb chops:

    • Heat olive oil in a frying pan over medium-high heat.

    • Season lamb chops with salt and pepper.

    • Fry or grill chops for 3–4 minutes per side for medium-rare, adjusting time for desired doneness.

    • Optionally, add rosemary to the pan for extra aroma.

  3. Serve:

    • Arrange lamb chops on plates and drizzle with mint sauce or serve it on the side.


Serving Suggestions


  • Serve with roasted potatoes, steamed vegetables, or grilled asparagus.

  • Pair with red wine such as Shiraz or Cabernet Sauvignon.

  • Rest lamb chops for 5 minutes after cooking for juicier meat.
