Placki Ziemniaczane (Polish Potato Pancakes)

Ingredients (Serves 4)
500 g potatoes, peeled and grated
1 small onion, grated
1 egg
2–3 tbsp all-purpose flour
Salt and black pepper, to taste
Vegetable oil, for frying
To Serve:
Sour cream or applesauce
Optional: sugar for sweet version
Preparation
Prepare the batter:
Grate potatoes and onion.
Squeeze out excess liquid using a clean cloth or paper towel.
In a bowl, combine potatoes, onion, egg, flour, salt, and pepper to form a thick batter.
Fry the pancakes:
Heat oil in a skillet over medium heat.
Drop spoonfuls of batter into the hot oil and flatten slightly.
Fry 3–4 minutes per side until golden brown and crispy.
Drain on paper towels.
Serve:
Serve hot with sour cream, applesauce, or a sprinkle of sugar depending on preference.

Remove as much liquid from grated potatoes as possible to achieve crispier pancakes.
Maintain medium heat while frying to ensure pancakes cook through without burning.
