Sernik (Traditional Polish Cheesecake)

Ingredients (Serves 6–8)
For the crust (optional):
200 g digestive biscuits or shortcrust pastry
100 g butter, melted
For the filling:
500 g twaróg (Polish farmer’s cheese) or well-drained quark
200 g sugar
3 eggs
1 tsp vanilla extract
2 tbsp all-purpose flour
100 ml sour cream or heavy cream
Optional topping:
Fruit preserves, fresh berries, or powdered sugar
Preparation
Prepare the crust:
Crush biscuits and mix with melted butter.
Press into the bottom of a greased springform pan.
Optional: bake for 5–7 minutes at 180°C (350°F) to set.
Prepare the filling:
In a large bowl, beat twaróg with sugar until smooth.
Add eggs one at a time, then mix in vanilla, flour, and sour cream/heavy cream.
Bake the cheesecake:
Pour filling over the crust in the pan.
Bake at 170°C (340°F) for 50–60 minutes until the top is lightly golden and set.
Cool gradually to prevent cracking, then refrigerate for at least 2 hours before serving.
Serve:
Slice and serve chilled, optionally with fruit preserves, fresh berries, or a dusting of powdered sugar.
