Sernik (Traditional Polish Cheesecake)

Ingredients (Serves 6–8)


For the crust (optional):

  • 200 g digestive biscuits or shortcrust pastry

  • 100 g butter, melted

For the filling:

  • 500 g twaróg (Polish farmer’s cheese) or well-drained quark

  • 200 g sugar

  • 3 eggs

  • 1 tsp vanilla extract

  • 2 tbsp all-purpose flour

  • 100 ml sour cream or heavy cream

Optional topping:

  • Fruit preserves, fresh berries, or powdered sugar


Preparation


  1. Prepare the crust:

    • Crush biscuits and mix with melted butter.

    • Press into the bottom of a greased springform pan.

    • Optional: bake for 5–7 minutes at 180°C (350°F) to set.

  2. Prepare the filling:

    • In a large bowl, beat twaróg with sugar until smooth.

    • Add eggs one at a time, then mix in vanilla, flour, and sour cream/heavy cream.

  3. Bake the cheesecake:

    • Pour filling over the crust in the pan.

    • Bake at 170°C (340°F) for 50–60 minutes until the top is lightly golden and set.

    • Cool gradually to prevent cracking, then refrigerate for at least 2 hours before serving.

  4. Serve:

    • Slice and serve chilled, optionally with fruit preserves, fresh berries, or a dusting of powdered sugar.

  • Bake at a moderate temperature and cool gradually to avoid cracks on the surface.
