Ingredients (Serves 2–3)

  • 400 g farmer’s cheese (or well-drained cottage cheese)

  • 1 egg

  • 2–3 tbsp sugar

  • 1 tsp vanilla sugar or extract (optional)

  • 3–4 tbsp flour (plus extra for shaping)

  • Pinch of salt

  • Butter or oil, for frying

Preparation

  1. Prepare the mixture:

    • In a bowl, combine farmer’s cheese, egg, sugar, vanilla (if using), flour, and salt.

    • Mix until a soft dough forms.

  2. Shape the pancakes:

    • Lightly flour your hands and shape the mixture into small round patties.

  3. Cook:

    • Heat butter or oil in a skillet over medium heat.

    • Fry syrniki for about 3–4 minutes per side until golden brown and cooked through.

  4. Serve:

    • Serve warm immediately with your preferred toppings.

Cooking Tips

  • If the mixture is too wet, add a little more flour; if too dry, mix in a spoonful of sour cream.

  • Cook over medium heat to prevent burning while ensuring the inside cooks through.

Serving Suggestions

  • Serve with sour cream and fruit preserves such as strawberry or raspberry jam.

  • Dust with powdered sugar and pair with fresh berries or honey for a sweeter option.
