Syrniki (Farmer’s Cheese Pancakes)

Ingredients (Serves 2–3)
400 g farmer’s cheese (or well-drained cottage cheese)
1 egg
2–3 tbsp sugar
1 tsp vanilla sugar or extract (optional)
3–4 tbsp flour (plus extra for shaping)
Pinch of salt
Butter or oil, for frying
Preparation
Prepare the mixture:
In a bowl, combine farmer’s cheese, egg, sugar, vanilla (if using), flour, and salt.
Mix until a soft dough forms.
Shape the pancakes:
Lightly flour your hands and shape the mixture into small round patties.
Cook:
Heat butter or oil in a skillet over medium heat.
Fry syrniki for about 3–4 minutes per side until golden brown and cooked through.
Serve:
Serve warm immediately with your preferred toppings.
Cooking Tips
If the mixture is too wet, add a little more flour; if too dry, mix in a spoonful of sour cream.
Cook over medium heat to prevent burning while ensuring the inside cooks through.
Serving Suggestions
Serve with sour cream and fruit preserves such as strawberry or raspberry jam.
Dust with powdered sugar and pair with fresh berries or honey for a sweeter option.
