Česnečka (Czech Garlic Soup)

Ingredients (Serves 4)
6–8 cloves garlic, thinly sliced or minced
4 medium potatoes, peeled and diced
1 onion, chopped
1 liter chicken or vegetable broth
2 tbsp butter or oil
Salt and freshly ground black pepper, to taste
Optional: smoked sausage slices, croutons, or grated cheese for garnish
Fresh parsley, chopped, for garnish
Preparation
Cook the base:
In a large pot, heat butter or oil over medium heat.
Sauté onion until soft and translucent, then add garlic and cook for 1–2 minutes until fragrant.
Add potatoes and broth:
Stir in diced potatoes and pour in the broth.
Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
Season and finish:
Season with salt and pepper to taste.
Optional: puree part of the soup for a thicker texture.
Serve:
Ladle soup into bowls and top with croutons, sausage slices, or grated cheese.
Garnish with fresh parsley.
Cooking Tips
Cook garlic gently to avoid a bitter taste; it should be fragrant but not browned.
For a creamier texture, mash a portion of the potatoes into the soup before serving.
