Česnečka (Czech Garlic Soup)

Ingredients (Serves 4)


  • 6–8 cloves garlic, thinly sliced or minced

  • 4 medium potatoes, peeled and diced

  • 1 onion, chopped

  • 1 liter chicken or vegetable broth

  • 2 tbsp butter or oil

  • Salt and freshly ground black pepper, to taste

  • Optional: smoked sausage slices, croutons, or grated cheese for garnish

  • Fresh parsley, chopped, for garnish


Preparation


  1. Cook the base:

    • In a large pot, heat butter or oil over medium heat.

    • Sauté onion until soft and translucent, then add garlic and cook for 1–2 minutes until fragrant.

  2. Add potatoes and broth:

    • Stir in diced potatoes and pour in the broth.

    • Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.

  3. Season and finish:

    • Season with salt and pepper to taste.

    • Optional: puree part of the soup for a thicker texture.

  4. Serve:

    • Ladle soup into bowls and top with croutons, sausage slices, or grated cheese.

    • Garnish with fresh parsley.

  • Cook garlic gently to avoid a bitter taste; it should be fragrant but not browned.

  • For a creamier texture, mash a portion of the potatoes into the soup before serving.
